Global Graduate Trainee - R&D Analyst Sourdough

Job Description

Become our Global Graduate Trainee in R&D Sourdough and join our rapidly growing, global team!

Over the course of our 3-year Graduate Trainee program, you have the opportunity to take part in 3 annual rotations within our Research & Development Sourdough department in the SBU Bakery in our HQ and with a mission abroad (+/- 1 year foreign experience).

You are responsible for:

YEAR 1: Deep-Dive into Sourdough Science

Explore the structural impact of sourdough in bread applications through a comprehensive literature review and by mapping internal and external knowledge.
Get hands-on in our test bakery to experiment with different sourdoughs, yeasts, and process parameters. From preparing and conducting trials to documenting insights in our internal Oak system, you'll drive discovery.
Collaborate with the Group Research Service department to develop lab protocols that reveal structural changes in bread and, where possible, perform these analyses directly.
Work with external partners as needed to outsource specialized tests.
Analyze results, draw meaningful conclusions, and recommend actions to shape the future of sourdough.
Transform your findings into compelling formats and share them with our global R&D community via webinars. Aim high—if possible, publish your results in a scientific journal.

Year 1: Unveiling Predictive Power

Lead the creation of an AI-driven model to predict sourdough on characteristics.
Assess existing data to identify gaps and design trials to bridge them. From protocol design to results analysis, you’ll take the lead.
Collaborate closely with data scientists to shape the predictive model.

YEAR 2: Turning Insights into Action

Leverage your findings from Year 1 to deliver impactful applications.
Share refined insights with the global R&D community through webinars and actionable reports.
Continue targeted analyses as needed and develop a robust action plan to address potential gaps, identifying the resources and collaborators required for success.
Validate the predictive model in collaboration with target markets and customers to ensure its real-world relevance.
Aim to elevate your work by publishing findings in a scientific journal, if feasible.

YEAR 3: From Concept to Market Impact

Embark on an international assignment in a Puratos country with a vibrant sourdough market.
Assist in building the local sourdough market. From product formulation and positioning to delivering local training, your influence will be tangible and transformative.

The goal of our program is to prepare talented, passionate professionals towards future leading roles within our company.

Each Graduate Trainee will be assigned to an expert Mentor, who will ensure you receive all the continuous support and training you need to be successful during your 3 annual rotations. After your 3-year graduate program you move to an exciting role within Puratos to build further your career within our global business.

Who are we looking for?

A Master's Degree from a University with excellent academic track record (Bioscience engineering, Food Technology,…)
You will either be in your final year of University study, or have graduated within the past 12 to 18 months (more experienced candidates are welcome to apply to other roles at Puratos via our careers page)
General knowledge about ingredient functionality and food processing
A first work or Internship experience, preferably in the Food, FMCG or similar industry
Drive for innovation, teamwork, flexibility and achievement orientation
Engagement and Passion for the Food industry
Be fully mobile to work in different global business areas/ locations
Be fully business-fluent in English (French, Dutch and/or other European languages highly advantageous)
